Journey of an apple cinnamon muffin
These muffins are perfect with a cup of tea on a cold day. Life rule: always say yes to baked apples. I found the recipe on hotchocolatehits.blogspot.com. Its insanley easy and simple (especially if you have friend to dice 3 cups of apples).
Ingredients:
-3 apples- peeled, cored, and cubed. Should make 3 cups of chopped apples
-1 1/2 cups granulated sugar
-2 whole eggs
-1 cup vegatable oil
-1 tblsp vanilla extract
-1 teaspoon salt
-1 tsp cinnamon
-1 tspn baking soda
- 3 cups all purpose flour
- 1/3 cups brown sugar for sprinkling on the tops and making them pretty
Heres what you do (recipe abreviated by yours truly):
Preheat oven to 350 degrees and line a muffin tray with 18 liners. In a medium sized bowl mix eggs, sugar, oil, and vanilla. Mix in cinnamon, soda, and salt. Mix in 1 cup of flour at a time, use spatula to scrape the sides and occasionaly fold in the flour. Fold in the apple pieces. Fill in the liners 3/4 full and sprinkle each with 1-2 tsp of brown sugar. Bake for 20-24 minutes. Nom.
